"This traditional Ticino product par excellence also comes from our farm. It is a unique wholemeal polenta that is available in ""millo corvo"", red and white varieties.
The ""millo corvo"" maize is a very old variety and is sown in April, harvested at the end of September and milled in Ticino.
""Millo corvo"" maize flour is rich in polyphenols and natural anthocyanins that give the kernels their black colour. It also has twice as much protein as ordinary maize, 20% less carbohydrates, and is gluten-free.
It is prepared in the same way as traditional polenta, but its appearance and flavour are stronger and its colour tends towards purple when cooked.
Perfect with tomato dressings and cheese."
